Paleo Coconut Date Balls

A deliciously guilt free snack:

For our Muslim readers out there during the blessed month of Dhul-Hijja, we’d love to wish you an early Eid Mubarak and may Allah accept all your good deeds during the first ten holy days of Dhul-Hijja. Just as the last 10 days of Ramadan are the best time for self reflection, repentance and doing good, so the Prophet (P.B.U.H) advised us to practice spiritual devotion during these ten days in the month of Dhul-Hijja. Some of the good deeds we can practice are performing hajj, giving charity, prayer, reading Quran, Thikr, and keeping good ties with our family and friends. The prophet (P.B.U.H) used to fast during these holy days as well. So we thought we would share with you one of our favorite snacks/desserts that is easy to make and would be a perfect addition to your Iftaar this holy month! This recipe is gluten free and paleo.

All you will need is:

10-15 Mejdool dates (pits removed)

1/4 cup of pecans

1- 2 tablespoon of coconut oil

1 tablespoon water

1/4 shredded coconut for mixture

1/4 – 1/2 cup shredded coconut for COATING

Optional (Sugar free chocolate chips)

Optional (Honey to taste)

Method:

This is pretty easy, in a food processor, add nuts and pulse for a few seconds, and then the rest of the ingredients (except the shredded coconut reserved for coating.)

Mix ingredients into a pasty mixture, then scoop a tablespoon of the mixture into a ball and coat with shredded coconut. And repeat for the rest. Transfer to a glass casserole tray (or whatever you prefer). When you’ve done all of them, cover your tray and place it in the refrigerator to chill. They taste better when they’re cold and a bit firm. Enjoy!
